Ingredients

  1. 500 gmbasmati rice
  2. 2medium size carrot cut into small pieces
  3. 1big capsicum diced
  4. 1/2 cupfrozen green peas
  5. 2medium size potatoes cut into small cubes
  6. 1big tomato chopped
  7. 5-6green chillies
  8. 1/4 cupMint leaves and coriander leaves
  9. 1onion finely chopped
  10. 1 tspginger garlic paste
  11. as required 4 bay leaves,3 green cardamom,1 black cardamom, 6-7 pepper corns
  12. 4-5cloves,
  13. 1 tsp caraway seeds
  14. 1tsl cumin seeds
  15. 2 tbspcurd
  16. 3 tbspfried onion
  17. 1/2 tspred Chilli powder
  18. 1/4 tspgaram masala powder
  19. as tasteSalt
  20. 1/4 tsporange food colour
  21. 1/4 cupoil or ghee

Cooking Instructions

    First wash and soaked the rice in water for 30-40 minutes.meanwhile wash and cut the veggies.

    Take a kadhaj.add oil when it becomes hot add half quantity of whole spices mention above.when they splatter add onion and saute until they turn light golden.now add carrot and saute on high flame for 2 minutes.then add all the vegetables. Mix well.

    Add ginger garlic paste,red Chilli powder,tomato,green chillies, salt.mix and cook for a minute add curd mix nicely cover and cook on medium. Flame for 5-6 minutes.check it when the potato turns soft turn off the flame.

    Take another vessel add 4 cups water add remaining whole spices and salt.give it boil.wgen water is boiling add soaked rice in it.cooked the rice 80%done.strain the rice keep aside.

    Take a wide vessel add a layer of rice.then add some vegetables.spread some mint and coriander leaves then some frrjed onion.again repeat the same process and make second layer likewise.

    Now make third and last layer.add rice on top layer.spread mint and coriander leaves.spread remaining fried onion.
    In a bowl take 2tbsp water add food colour and spread a little amount of this colour on top of rice.cover and cook on summer for 10 minutes.turn off the flame

    Pulaw is ready to serve. Enjoy it with salad and raita.
