Muhammara (Red Bell Pepper and Nuts Dip)

I had this at my friend's house. I was surprised how delicious it was after the first bite. It was store-bought Muhammara, but I checked the ingredients, and made some myself at home.
It seems that pomegranate syrup is used to make this, but I made pomegranate juice instead since I can't get hold of the syrup. I think you can substitute the pomegranate juice with store-bought pomegranate syrup or juice. If using pomegranate syrup, use a tiny bit. Or you can omit it.. Recipe by Torepiante

Cooking Instructions
- 1
Grill the red bell pepper, or cook it over an open flame, until the skin has turned black. Once it's cool, peel off the burnt skin.
- 2
Lightly roast the walnuts in a frying pan. If you don't like the smell of raw garlic, add the garlic into the frying pan, and roast a little.
- 3
Roughly cut the red bell pepper.
- 4
Take the seeds out from the pomegranates. Put 3 tablespoons of pomegranates and 1 tablespoon water in a blender, then strain through a tea strainer to make pomegranate juice.
- 5
Put all the ingredients in a food processor, and pulse until smooth. And it's done.
- 6
You can top with some chili pepper, cumin powder and olive oil to serve.
- 7
You can dip vegetables or bread (pita or other Arabian bread is even better) in this dip, like hummus.
- 8
It's also nice to top with pine nuts.

Hummus (Chickpea Dip) Hummus (Chickpea Dip)
A Lebanese friend taught me this recipe. I substituted Japanese nerigoma sesame paste for the tahini to make the preparations easier for myself since I live in Japan, but use what you have available!Although it takes more effort, it tastes better if you make this with cooked dry chickpeas instead of canned. Let the dip rest for several hours in the refrigerator before serving it to let the flavors settle in and round out the taste of the garlic. If you think "maybe it's not quite spicy enough" when you taste the dip right after it's made, it should become just right after having it sit for some time. Tahini (sesame paste) is hard to get in Japan, so I substituted in nerigoma sesame paste which is just a tad thicker in consistency. If you don't have nerigoma either, you can just try adding about a teaspoon of sesame oil. Recipe by nohunohu cookpad.japan -
