Ingredients

  1. Pine Nut Sauce
  2. 3/4 cuppine nuts, toasted
  3. 2 sliceswholemeal bread
  4. 1 clovegarlic
  5. 1 tablespoonlemon juice
  6. 1 cupfish or chicken stock
  7. 1 tablespoonchopped parsley
  8. 1 tablespoonbutter
  9. Rind of one lemon, cut into thin strips
  10. 4white fish fillets

Steps

  1. 1

    To make the pine nut sauce, place the pine nuts, bread, garlic lemon juice and stock into a food processor, and using the pulse action process for 30 seconds or until smooth.

    Transfer to a small pan, stir in the parsley and warm through.

  3. 3

    Within the sauce with extra stock if needed.

  4. 4

    Heat butter and lemon strips in medium pan, then add the fish.

  5. 5

    Cook on a medium heat for two minutes on each side.

  6. 6

    Serve the fish with pine nuts sauce and a green salad
