My friend Liliana left a bag of couscous at home. Inspired by the flavors of tabbouleh, I prepared this refreshing salad. It can incorporate, if desired, cucumber, tomatoes and lettuce.

Ingredients

  1. 1 cupcouscous
  2. Pinchsalt
  3. 1/2 teaspoonground cumin
  4. 1/2 cupfreshly squeezed lemon juice
  5. 1 cupwarm water
  6. 1/4 cupolive oil
  7. 1 cupchopped parsley
  8. 1/4 cupchopped mint
  9. A fewmint leaves for garnishing

Cooking Instructions

    Put the couscous in a glass or ceramic bowl, and toss with the salt and cumin. Mix together ¼ cup of the lemon juice and the water, and pour over the couscous. Let sit for 30 minutes, stirring the mixture from time to time to prevent it from lumping.

    Cover with a plate, and microwave for one minute; carefully remove the plate. Stir.

    Stir in the remaining lemon juice and the olive oil, and allow to cool. Toss with the remaining ingredients. Taste and adjust seasonings. Refrigerate until ready to serve.
