Ingredients

10 minutes plus 1 hour of freezing
  1. 1 cuprolled oats
  2. 1/2 cupchopped walnuts (or other nuts or chocolate chips)
  3. 1/2 cupground flaxseed meal
  4. 1/2 cupcrunchy peanut (or almond) butter
  5. 1/3 cuppure maple syrup (or honey)
  6. 1/2 teaspoonvanilla extract
  7. Shredded coconut for coating, if desired

Cooking Instructions

10 minutes plus 1 hour of freezing

    Combine all ingredients in a large bowl. Let the mixture rest for 10 minutes.

    Make small balls and roll on shredded coconut, if desired. Place on a parchment-paper-lined baking sheet (or plate) that can fit in the freezer.

    Freeze for an hour. Keep in sealed container in the freezer (or in the refrigerator if they are to be consumed soon).
