No-Bake (Raw) Energy Bites
Cooking Instructions

Combine all ingredients in a large bowl. Let the mixture rest for 10 minutes.

Make small balls and roll on shredded coconut, if desired. Place on a parchment-paper-lined baking sheet (or plate) that can fit in the freezer.

Freeze for an hour. Keep in sealed container in the freezer (or in the refrigerator if they are to be consumed soon).

I'm just recently jumping on the energy bite bandwagon and this is a recipe I concocted based on a mix of my two favorite cookie flavors (peanut butter and oatmeal raisin). The recipe is versatile though and there are tons of add in's and substitutions that can be used. For the sticky sweetener/binder you should have 1/3 cup total, so you could use agave instead or use all honey. Maple syrup may not bind well completely on its own. Christina -
