Ingredients needed

Tapioca Pearls: Prepare boiling water, add quick-cook tapioca pearls, simmer for 20 minutes, then turn off the heat and let sit for 20 minutes

Scoop out and soak in cold water to cool, then mix in honey

Pudding Mixture: Combine pudding ingredients and mix well

Milk Tea Custard: Combine milk, sugar, and tea bag, bring to a boil, steep for 5 minutes, then let cool

Add eggs, butter, and heavy cream, mix well, then sift in flour and cornstarch, mix well, then heat over a double boiler until thickened, cover with plastic wrap, and let cool

Prepare tart shells, pour in pudding mixture until 80% full, bake in an air fryer at 180°C (about 356°F) for 15 minutes, remove and let cool once fully cooked

Pipe milk tea custard onto the pudding tarts, then top with tapioca pearls and wafer rolls

I found a good recipe in the microwave instruction manual book, so I re-arranged that recipe many times and it turned into my own recipe.When you make the caramel sauce, you can also use a sauce pan. Either way is fine but don't take too long to make it. And please be careful not to burn yourself as the caramel sauce is extremely hot Adding gelatin in the sauce prevents the sauce running and also adds more jiggle.I make the sides of the tart higher because when you pour the pudding mixture it stops any escaping.
