Hearty Vegetables in the Microwave with Anchovy Mayonnaise

I was thinking about making some bagna càuda, but I ran out of heavy cream! So, I took a look at what I had, and tried some mayonnaise instead. It was great!

It's a great side dish or snack!

Add a little garlic at a time.

The leafy part of the broccoli crumbles easily, but you can add it if you like!

It'd probably be quite yummy with ham, bacon, wiener sausage, etc.

Ingredients

2 servings
  1. 1/2Kintoki carrots (or normal carrots)
  2. 1Potato
  3. 4 cmBroccoli stalks
  4. 1/4 cloveGarlic (grated)
  5. 1/2 tspAnchovy paste
  6. 1/2 tbspMayonnaise

Cooking Instructions

    Peel the carrot and potatoes and cut into wedges (or your favorite shape). Cut the soft, stems of the broccoli in the same way.

    Put the vegetables in a silicone steamer without water, cover with a lid, and microwave at 600 W for 3 minutes.

    Remove from the microwave. If you can easily poke through the vegetables with a skewer, add the garlic, anchovy pasty, and mayonnaise, mix it all together, and enjoy.
