Firstly wash the Ridge Gourd thoroughly with water. Peel the ridge gourd skin with peeler and use that peel for making chutney. Also set aside all remaining ingredients.

Heat oil in cooking pan and shallow fry ridge gourd peels first. Add salt, sugar, sesame seed, chopped chilies and crushed Garlic in fry pan. Keep Stirring it for 2 to 3 minutes on medium gas. Steer the mixture thoroughly.

Turn off the flame and let it cool down.

Ridge Gourd Peel Chuteny is ready to serve.

Put the mixture in mixi jar and grind it coarsely. Just on off-on off method. Don't grind to fine paste.
