Ingredients

  • 2 cupsrice
  • 1/3 cupvegetable oil
  • Gino paste tomato
  • Slicesonions
  • Blended pepper(3 tomatoes, 3 habanero,3 Bell Pepper,1 onion)
  • Salt to taste
  • 1/2 tspTurmeric powder
  • 1 tbsCurry powder
  • 1/2Rosemary
  • Seasoning cubes of your choice
  • Eggs

    In a medium pot, heat your oil on medium-high heat. Once the oil is heated add the onions fry just until they turn golden brown. Once the onions is brown add your tomato paste fry together for 2 minutes

    Then add the blended pepper mixture and cook
    Make sure you stir consistently so that it does not burn.

    Mix and add your seasonings (salt, curry powder, rosemary, all-purpose seasoning, and the Knorr stock cube). Continue to cook for 10 minutes.

    Add the parboiled rice to the pot. Mix it very well with the stew. At this point if you need to add water (I like to add hot water to make it faster)so that the rice is level with the stew go ahead and do so. Add the eggs(make sure you rise your egg before adding), cover the pot, and cook on medium to low heat for 15-30 minutes.

    Your super jollof Rice is ready
    Remove the eggs and peel.
    Children are already jubilating now. Serve them hot in their food flask with the eggs and plantain if you have
