Heat oil piping hot and keep aside to cool down. Cut slits in washed and cleaned lemons and steam boil them in cooker to 2 whistles. Cool and cut into quarters.

In a glass bowl take finely chopped jaggery add salt, hing, achaar masala, chilli powder(as per taste) and sugar.

Rub and mix well

Add in lemon juice and cooled oil and mix well.

Add in the lemon pieces

Mix gently

Cover and rest for a day. Stir 2-3 times in between

Serve lip smacking sweet lemon pickle with thepla, dhokla, khakhra
