Try this delicious treat for those lazy Sundays. A bed of arepa with chorizo and more... yum!

In a bowl, combine 2 cups corn flour, 4 pinches of salt, 4 tablespoons butter, and water. Mix until the dough is smooth and free of lumps. If needed, add more flour until the dough is soft and slightly sticky.

Let the dough rest for 5 minutes, then divide it into 6 equal parts.

Dice the pineapple and red onion. Slice the chorizo and chop the parsley to your liking.

In a skillet, sauté the pineapple and onion. Then add the parsley and chorizo, cooking until the chorizo is browned.

Start making your arepas. After the dough has rested for 5 minutes, roll each portion into a ball, then flatten with your hands into thick discs, like tortillas. Make them thick enough so you can slice them open later.

Once you have your six arepas and the skillet or griddle is hot, add your preferred cooking oil and spread it evenly with a paper towel.

Place the arepas on the oiled griddle. Cook each side for 6 to 7 minutes, flipping once, until both sides are well cooked.

When both sides are done, get ready to fill them. While still hot, slice each arepa open with a knife, add butter, cheddar cheese, and your chorizo mixture inside.

Repeat with all the arepas and serve. Arepas are best enjoyed hot or warm. Yum!
