Ingredients

8 portions of pasta
  • 160 gonion
  • 80 gcarrots
  • 40 gcelery
  • 1 clovegarlic
  • 40 mlolive oil
  • 2 pinchsalt

    Finely chop the garlic and heat over low heat with the oil.

    Finely chop all the vegetables. Remove the hard streaks from the celery beforehand.

    Add all the ingredients to 1 and cook over medium-low heat. Do not stir too much, but shake the pan occasionally to prevent it from burning.
    After the water has evaporated, turn the heat down to low and stir every five minutes.

    When they are sufficiently wilted and golden brown, turn the heat up to medium and mix well to avoid burning. It is ready when it has a caramel colour.

    Boiling down the vegetables concentrates their sweetness and taste. The sugars and amino acids in the vegetables create a Maillard reaction when heated, giving it a strong richness.
