A vegetarian/vegan pizza that evolved from “making do” with atypical ingredients. This is “pizza bianca” (no tomato sauce) made from sauerkraut, spinach and nut butter, providing a satisfying vegetarian experience.

A vegetarian/vegan pizza that evolved from “making do” with atypical ingredients. This is “pizza bianca” (no tomato sauce) made from sauerkraut, spinach and nut butter, providing a satisfying vegetarian experience.

Add dry ingredients to mixing bowl and mix with wooden spoon

Add water to dry ingredients and mix

Add oil and mix in as best you can
- 4
Place mixture on lightly floured surface and knead for up to 5 minutes

Put dough in mixing bowl (optional water added to encourage rise) and place in warmed oven

Mix sauerkraut and spinach in small pan on low-medium heat to thaw/simmer

Turn off heat and mix in some nut butter

Prepare desired toppings as needed

Remove dough from warming oven after it has doubled in size

Knead dough for 1 or 2 minutes and roll out flat on surface with rolling pin

Place dough on cooking sheet lined with cooking paper

Distribute toppings evenly over top of dough (optionally distribute based on household tastes)

Place cooking sheet in oven at middle level and turn on oven to medium-high heat (no need to preheat oven). Cook for 15 to 20 minutes.
