Steamed coconutty pumpkin curry

This is an amazing pumpkin recipe, origin is South India. The goodness and the yellow color of the pumpkin rich in nutrients and the simple cooking process make this pumpkin curry, yummy. You can have it with rice or just the curry too by itself.

This is an amazing pumpkin recipe, origin is South India. The goodness and the yellow color of the pumpkin rich in nutrients and the simple cooking process make this pumpkin curry, yummy. You can have it with rice or just the curry too by itself.

Cut the pumpkin in cubes with the skin intact and boil in 2 cups of water till 1 boil.

Blend the coconut gratings in a blender with 2 green chillies and half a cup of water. The blend should be a bit coarse in consistency.

Then take a cooking vessel, to it add the tsp of coconut oil. When oil heats up add mustard seeds, asafoetida, curry leaves, 1 green chilli

To this tempering add the cut pumpkin cubes.

Then add the tsp of turmeric powder and give it a gentle mix

Then add the blended coconut mix to the pumpkin cubes,salt to taste. Mix again gently. Cover it up. Let it cook on steam for 5 minutes. Do not overcook the pumpkin

When done, remove from fire and serve with warm rice.
