Podi Idli

Podi Idli

Steps

First, wash and soak the rice with flat rice or poha and urad daal with methi seeds separately for 8 hours.

Then first grind the urad daal in stone or mixer grinder till creamy and airy using as less water as you can. Keep stored in a large vessel.

Then grind rice coarsely with poha using water to make it of thick consistency and grainy texture.

Then again grind both together and keep covered to ferment in a warm place for 8 to 9 hrs till you get the fermented smell.

Then grease idli molds and pour batter in each mold. Sprinkle generous amounts of Podi chutney. Steam the idlis without whistle for 10 minutes on high heat.

Then let the pressure go off and open slowly. Remove the idlis after they cool with the help of a wet spoon. Keep covered with kitchen towel in a casserole.

Then to make podi: heat oil in a pan. Roast all the ingredients one by one starting with the daals and then all other ingredients.

Then cool and grind to a powder. Adjust the salt and spices.Your podi is ready. Sprinkle on idlis when they steam and serve more alongside mixed with sesame oil.

Delicious Idli Podi is ready. Serve with sambhar and capsicum chutney. Enjoy!
