Falhari Sabudana Vada / Sago Balls Vada

Falhari Sabudana Vada, one of my favorite fasting snacks is a savory and mildly sweet patty featuring tapioca pearls (sago), potatoes, peanuts and herbs. It is naturally gluten-free and vegan. This fool proof recipe gives you a super delicious, crispy Sabudana Vada with a soft and light interior. Basically sabudana is pure starch and carb loaded. They keep you full for a longer period and this is the reason they are included in the fasting food. In the Indian hindu tradition, the Shravan month, Ekadashi and the Navaratri period are times when many devout Hindus keep a fast (vrat/upvas). My sabudana vada recipe is an authentic Maharashtrian recipe.

Steps
- 1
First wash the sabudana with two to three times of water and soak it in clean water for 2 to 3 hours. Then drain the sabudana in a sieve and dry it completely.
- 2
Now in a large bowl, add the mashed boiled potatoes, steeped sabudana, chopped green chillies, chopped ginger, cumin seeds, black pepper powder, rock salt, crushed peanuts and chopped green coriander leaves and mix well. Make it like daugh.

- 4
Now grease your hands with oil and make round balls from this mixture and prepare a flat vada. Now make round balls to the vada for the second shape.
- 5
Now heat peanut oil in a nonstick pan, add sabudana vada and shallow fry on slow gas flame till both sides turn golden brown.
- 6
Now add a little peanut oil in the cavity of an appam pan to the other round shaped bowls, add the sabudana balls in it, add oil on top and fry till golden brown colour on both the sides.
- 7
Now our very crispy and delicious non-fried farali sabudana vada is ready to serve. Serve this sabudana vada with Falhari green Chutney.
