Dice the onion and poblano/jualapeno. Mince the garlic.

Add onion and poblano/ jualapeno to pot with a pinch if salt. Cook until onion is translucent.

Add garlic, cook until fragrant.

Dice the chipotle peppers. Add them with tomato paste and dry spices. Cook for about 30 seconds.

Add vegetable stock and crushed and diced tomatoes. Mix well.

Add lentils. Bring pot to a boil. Reduce heat and let it simmer for 15-20 minutes till the lentils are cooked through. Stir occasionally.

Drain and rinse the black beans. Add them to the pan. Don't drain and rinse the kidney beans. Add the kidney beans with the juice from the can to the pot. Also add the corn.

Cover pot and simmer for 10 minutes.

Add soy sauce, brown sugar, vinegar and hot sauce.
