Spinach Salad with Hummus Dressing

I wanted to used up the leftover Hummus and made it into a salad dressing. Then I dressed Baby Spinach with the Hummus Dressing. For a colour, I also added Carrot. The salad was not bad, but it was lacking something. And the something was Onion!!! Even though you are not a fan of fresh Onion, try it. Onion tastes great with Hummus Dressing.

Ingredients

2 to 3 Servings
  • 80-100 gBaby Spinach
  • 1/8Red Onion *thinly sliced
  • 1/2Carrot *cut into thin strips
  • Hummus Dressing
  • 4 tablespoonsHummus
  • 1 tablespoonOil *e.g. Olive Oil, Sunflower Oil, etc
  • 1/2 tablespoonWhite Wine Vinegar OR Lemon Juice *OR Vinegar of your choice
  • 1-2 pinchesSalt

Steps

  1. 1

    Combine all the Dressing ingredients in a mixing bowl. Alter the amount of Salt to suit your taste. *Note: You can add a small amount of Cold Water to thin the dressing if you want to do so.

    Add all Vegetables and mix to combine.
