Put the shredded coconut and granulated sugar in a large bowl and use a whisk to stir well. Sift cake flour over it. Stir well.

Beat an egg lightly. Add the egg to the mixture while drawing circles, and fold it until combined. Add melted butter, and mix well. Press it to flatten the dough.

Cover the bowl with cling wrap and let it sit in a fridge for 30 minutes. Preheat an oven to 180℃ / 356 F.

30 minutes later, place a template mat on a baking sheet lined with parchment paper. Spread the mixture onto the template mat. Cover it with cake film (or cling wrap). Press it to flatten and fill up the gaps.

Gently peel off the film and then gently peel off the mat. Lower the oven to 160℃ / 320 F and bake for 13-16 minutes until golden brown. Bake the remaining in the same way.

Take it out of the oven, let it cool for a few minutes, then transfer it to a rack to cool completely. Please store them in a closed container. If possible, please put a desiccant in the container together.
