Allo baigan - eggplant and potato

Cut eggplant and potatoes in round slices. And shallow fry them in oil. They should be 90 - 95 % cooked.
Keep them aside. - 2
Take another pot, add 3 tbsp oil and add finely chopped onions.

Add ginger garlic paste. Cook until light golden.

Add finely chopped tomatoes, green chillies, all spices.
Cover and let it cook for 15 mins. Now the oil will be seprated. - 5
Add fried vegetables and cover. Let it simmer for 10 mins on very slow flame.

Garnish with fresh Coriander and serve with roti or boil rice.
