Lately, I've been making food to take to the office with my coworkers pretty often, but I'm getting tired of chicken and pork dishes. I found some beef in the fridge, so I decided to try making beef curry instead. For this recipe, I used fresh boiled bamboo shoots from home.

Ingredients

Serves 2-3 servings
  1. 6 ozsliced beef (about 180 grams)
  2. 2-3fresh bamboo shoots, boiled and cut into small pieces
  3. 2 tablespoonsred curry paste
  4. 1small bottle (about 1 cup/240 ml) coconut milk
  5. 1/3 cupwater (about 100 ml)
  6. 6-7Thai eggplants, cut into wedges and soaked in water
  7. 3-4 sprigsfresh Thai basil (leaves only)
  8. Sliced red chili peppers
  9. 4-5kaffir lime leaves, torn into pieces
  10. Fish sauce
  11. Coconut sugar

    First, place a pot over medium heat. Add the curry paste, then gradually add a little coconut milk at a time, stirring constantly. When the curry paste thickens, add the sliced beef and stir until the beef starts to cook. Add the rest of the coconut milk and water, and let it come to a boil.

    Next, add the bamboo shoots and Thai eggplants in order. Let them cook for a few minutes until both vegetables are tender. Then add the sliced red chili peppers and torn kaffir lime leaves. Season with fish sauce and coconut sugar to taste, aiming for a salty flavor with a hint of sweetness.
