First of all we will make homemade kadai masala. For this, heat a pan and add Kashmiri dry red chillies, black pepper seeds, cumin seeds, dry coriander seeds and cinnamon and dry roast it on low flame. Now keep this khada masala to cool. Once it cools down, grind it into a powder foam in a mixer jar.

Now let's make gravy. For this, heat oil and butter in a pan, add bay leaves and chopped onion and saute till the onion turns a little brown.

Now add ginger + garlic paste to this and saute it a few times, add Kashmiri red chili powder and finely chopped tomato to it, cover the lid on slow flame of gas and cook till the tomato becomes a little soft.

After that add turmeric powder, coriander cumin powder and salt and mix it, add fresh tomato puree and water and mix it and cook it on slow flame of gas. Now take this gravy in a bowl and keep it to cool.

Now we will roast paneer and other vegetables in oil. For this, heat oil in a pan, add onion, bellpeppers and paneer, sprinkle salt and homemade kadai masala and toast on medium gas flame.

Now our gravy is cool down. So add this to a mixer jar and grind it into a paste foam. Add this paste to a hot pan and keep the gas flame low.

Now add roasted bell peppers, onion and paneer to this paste and mix gently. Now add kasoori methi and green coriander leaves to this and mix well and switch off the flame.

Now our delicious and Dhaba style kadai paneer is ready to serve. Garnish this sabji with green coriander leaves and roasted paneer, bell peppers and onions.
