Puran Poli (पुरणाची पोळी)

First, wash and soak the lentils for 3 to 4 hours. Strain from water and pressure cook with 1 cup water, turmeric powder and oil. Time taken upto 5 whistles.

Now let the pressure come down completely and add the jaggery, cardamom and nutmeg powders to it. Mash well.

Cook this mixture on slow flame, in a heavy bottomed pan stirring constantly till water evaporates and you have a thick mix coming off from sides. Remove from heat and cool. Then mash well and run it through a sieve or the Puran Yantra or churning machine for this purpose.

Mix a semi stiff dough with both the flours, salt, 1 tablespoon oil, 1 pinch turmeric powder, and water in small quantities. Cover it with a damp cloth and rest for 20 minutes.

Make small balls of the stuffing and also equally sized same number of balls from the dough.

Roll out a small thick disc from the dough ball. Stuff with the prepared ball of stuffing. Pull edges together and pinch well to seal completely.

Heat a skillet. Roll out a thick round chapati or disc on the floured platform from the prepared stuffed dough ball. Take care to not break the surface so the filling does not spill out.

Place on hot skillet, roast from both sides in medium heat.

Then spread ghee and roast on both sides till golden and aromatic. Serve immediately with Kadhi and more melted ghee! Enjoy!
