Pesto Oven baked salmon with vegetables & Gran Nero
Tasty salmon and roast vegetables with black rice (Gran Nero- high in antioxidants).
Steps

Heat your oven to 180 degrees

On a large tray place foil to cover. You will need enough to make a parcel. Add two salmon fillets to one side of the tray.

Grate the two peeled garlic gloves a generous portion of olive oil and table spoon of pesto and mixed together thoroughly.

Spoon your marinade ontop of the salmon and spread so they are fully covered.

Chop your cherry tomatoes & red onion

Drain half a jar of olives and chop in halves.

On the opposite side of the tray to the salmon add your tomatoes, onion and olives add a generous portion of olive oil.

Fold over all four sides of your foil to make a parcel pop into your preheated oven for 20 mins.

Open the foil parcel give the vegetables a stir then pop back in the oven for five -10 minutes more depending how you like your salmon and vegetables.

Meanwhile Microwave the Gran Nero rice I use the microwave version but you can buy the dry alternative and boil but it takes longer.

Place your salmon vegetables and rice on two plates and enjoy.
