Papas rellenas or stuffed potatoes are a very popular dish in Chile and other Latin countries. It consists of a mashed potatoes seasoned with salt, pepper, butter and egg. It has a filling with meat, raisins, egg and olives. It is given a shape of the potato, cook and deep fried.

Ingredients

14 stuffed potatoes
  1. ingredients to make mashed potatoes
  2. 3.40 lb./ 1 and 1/2 kg potatoes after peeled
  3. 2beaten eggs
  4. 3 tbspsalted butter
  5. 1 tspsalt or to your own taste
  6. 1/4 tspground pepper
  7. 2beaten eggs
  8. beef filling
  9. 1 lb.ground beef
  10. 1 lb.diced onion
  11. 2 clovesgarlic, chopped
  12. 1 tsppaprika
  13. 1 tspcumin powder
  14. 28 grraisins
  15. 1/4 tspground pepper
  16. 1 tspsalt or to your own taste
  17. other ingredients for the filling
  18. 14black olives
  19. 1-2hardboiled eggs cut into small pieces
  20. breading the potatoes
  21. 2beaten eggs
  22. Regular breadcrumbs or Panko

Cooking Instructions

    PROCEDURE FOR MAKING BEEF STUFFING
    Heat well a stainless-steel skillet.
    Add the ground beef and brown well on both sides.

    Remove the excess fat and leave enough to brown the onion with the garlic together.

    Add to the meat the rest of the ingredients, cook for a couple of minutes without burning. Adjust salt and let it cool off.

    PROCEDURE FOR MASHED POTATOES
    Put the potatoes in a pot covered with water and sea salt. Cook the potatoes until a toothpick can be penetrated.

    Throw away the water, add the butter, salt and pepper to your own taste and make the mashed potatoes. Let cool off complete.

    Once the potatoes are cold mix in the beaten eggs.

    MAKING THE STUFFED POTATOES
    Put in the palm of your hand a handful of the mashed potatoes. Stretch the dough in your hand that reaches almost at the end of your fingertips, covers the sides of your hand, and almost covers up to the beginning of your wrist.

    Place in the center the beef filing, 1 olive and 1 piece of egg.

    With your fingertips close inward. Use your thumb to push the mashed potatoes toward the center. With the other hand push the opposite side to the center as well. Close well and give the shape of the potato.

    Dip the potatoes in the beaten eggs, breadcrumbs and fry at a temperature of 178 ° C / 350 °F until the potatoes are golden brown.

    I served the stuffed potatoes with a salad made with tomatoes, cooked corn kernels, onions, cilantro and scallions.
