This is one of the famous Chaat, crisp balls of tempered mashed potatoes coated with gram flour and deep fry.
Steps

Boil potatoes, let it cool down and mash them.

Mix mashed potatoes, green chillies paste, ginger paste, garlic paste, garam masala, lemon juice 🍋, sugar, salt and chopped coriander leaves mix.

For tempering: heat oil, add mustard seeds and asafoetida, after mustard seeds splutters remove from flame, add turmeric powder and red chillies powder to the hot oil, pour this hot tempering over the potatoes mixture.

Mix well and make balls from this mixture, keep aside.

For batter: make a thick batter with gram flour, rice flour, and about 1/2 cup water mix, add green chillies paste, turmeric powder, 🌶️red chillies powder, salt🧂and mix.

Heat oil in a wok, dip balls into batter and deep fry them in hot oil till golden brown.

Serve hot with tamarind chutney, 🍅 tomato ketchup
