  2. 5 1/3 ozpork belly
  3. 5 1/3 ozpork shoulder or any preferred cut
  4. 2 tablespoonstapioca starch
  5. Onion powder, garlic powder, pepper, sugar, fish sauce, oyster sauce
  6. Annatto oil
  7. Dipping sauce
  8. Water
  9. Fish sauce
  10. Green papaya, cucumber, carrot
  11. Basic seasonings
  12. Vermicelli (fresh or dried) and fresh herbs for serving

Cooking Instructions

    Trim a bit of fat from the pork belly.
    - Grind the meat finely with 2 tablespoons of tapioca starch.
    - Dice the fat into small cubes.

    Grind the pork shoulder finely or coarsely, depending on your preference.

    Mix the finely ground pork belly, ground pork shoulder, and diced fat. Add the marinade: onion powder, garlic powder, pepper, oyster sauce, fish sauce, and sugar.

    Shape the mixture into patties or, if you're feeling lazy like me, form a large piece and place it in an air fryer. Grill at 356°F (180°C) for 8 minutes on each side.
