Cooking Instructions

Trim a bit of fat from the pork belly.
- Grind the meat finely with 2 tablespoons of tapioca starch.
- Dice the fat into small cubes. - 2
Grind the pork shoulder finely or coarsely, depending on your preference.

Mix the finely ground pork belly, ground pork shoulder, and diced fat. Add the marinade: onion powder, garlic powder, pepper, oyster sauce, fish sauce, and sugar.
Add annatto oil for color.

Shape the mixture into patties or, if you're feeling lazy like me, form a large piece and place it in an air fryer. Grill at 356°F (180°C) for 8 minutes on each side.

Prepare the dipping sauce to your family's taste. Toppings can include green papaya, cucumber, and carrot as desired.
