Semolina Vegetable Upma
A healthy, yummy and filling dish, Upma.
Steps

Assemble ingredients

Put water to boil

In moderately heated pan add oil, add mustard seeds + curry leaves and allow to sizzle, then add Onion + carrot + capsicum + little salt + turmeric and stir fry for 3-4 minutes.

Add semolina and roast for 2-3 minutes. Add sugar + salt at this stage.

Then add water and keep stirring, water evaporates as semolina cooks. Add salt as required and mixture thickens.

Simmer for 2-3 minutes under low flame, add ghee + roasted cashews (optional) and mix well. Upma is ready to serve.

Garnish with pomegranate and enjoy.
