Mediterranean Roasted Sausage and Vegetables

Ingredients

  1. 1 kgPork Sausages
  2. 2Onions, peeled and chopped
  3. 15 mldried Italian Herbs
  4. 8Garlic cloves, peeled and halved
  5. Halfa small head of Broccoli, broken up in florets
  6. Halfa small head of Cauliflower, broken up in florets
  7. 1sweet Potatoes, cubed
  8. 30 mlOlive Oil
  9. 400 gchopped Tomatoes in tomato juice
  10. 15 gParsley leaves
  11. 20Black Olives, pitted

Cooking Instructions

    Preheat oven to 200° C. Oil a large roasting tray.

  2. 2

    Place Sausages, Onion, Italian Herbs, Garlic, Broccoli and Cauliflower and Sweet Potato in oiled large roasting tray. Drizzle with Olive Oil. Roast for 40 minutes.

    Remove from oven, add Tomatoes, Olives and Parsley. Return to oven and roast for another 10 minutes.

    Serve with Couscous or Krummelpad.
