- 1
At first, take gram flour add baking soda in it.
Add 1 cup water and whisk to make a smooth batter without any lumps. The consistency of the batter is important. - 2
Tip 1 : If they become flat, the batter is thin. To correct the consistency, add a bit of gram flour and check by frying a few boondi if too thin.
Tip 2 : If the boondi are thick and if they get tail ends, the batter is thick. Then add a bit of water and then do the same test. Once you get the correct consistency, proceed with the next step of frying the boondi.
- 3
Then take 2 cups sugar and 3/4 cup water in a pan to make the sugar syrup. Cook the sugar syrup, stirring frequently until you get a one thread consistency.
Add the boondi in the sugar syrup. Cover and simmer for 3 minutes. - 4
After 3 minutes, the sugar syrup will be absorbed. Turn off the flame and cover it for 2 minutes. Lightly roast melon seeds in a pan and add them to the boondi and pistachio nuts to it. Once everything is mixed together add ghee and cardamom powder to it.
