Coconut pancake

You guys all know how snacky coconut is, most especially those Ghana 🥥 🥥🥥 , so I felt like eating pancake on a lazy Friday morning. I went to my kitchen and was about to prepare my regular vanilla pancakes, then I changed my mind and decided to do smth disparate for a change. Coconut pancake was the first thing that came to my cerebrum. I prepared it, and it was so snacky🤤🤤😁 my momma loved it. Here it is, I hope you give it a try and enjoy it.😁😁😁

I went to my kitchen and was about to prepare my regular vanilla pancakes, then I changed my mind and decided to do smth disparate for a change. Coconut pancake was the first thing that came to my cerebrum. I prepared it, and it was so snacky🤤🤤😁 my momma loved it. Here it is, I hope you give it a try and enjoy it.😁😁😁

Sieve flour into a clean bowl, add your sugar, salt, ground pepper, and baking powder. Combine thoroughly with a whisk and set aside.

In a separate bowl, crack your eggs and whisk till it becomes frothy. Add your melted butter, milk, vanilla extract, and coconut extract. Combine thoroughly with a whisk.

Turn the liquid mixture into the dry mixture, add little water and mix into a smooth batter. The batter shouldn’t be too thin or thick.

Add your shredded sweetened coconut and combine into the batter till it’s fully incorporated. Don’t forget to add a heart full of love😉😹😹

Grease your frying pan with coconut or vegetable oil, use a ladle(soup spoon) to scoop little batter into the pan. I used a ladle because I can get the round shape by using the ladle.

Fry your pancake on low heat so it doesn’t get burnt. Your pancake will begin to bubble, but don’t flip just yet. Wait for the bubbles to reach the center, and once bubbles are popping all over, then it’s time to flip. I used a flat spoon to flip over so as to retain the round shape. Allow to cook for a minute before removing from the fire.

Do this until the batter is exhausted, then you serve with any tea or beverage of your choice. I had mine with ginger-honey tea.☺️☺️☺️
