This is everyone’s favourite! Always a winner on a Sunday table with the family.

Traditionally, we prepare the meat mixture at home and send it to the a place in the neighborhood with a communal oven, like a bakery, we call it Foron, where they have the dough ready and we just assemble the ingredients and bake them there.

I was so happy to make this here in the UK and recreate the flavours of Lebanon in my tiny kitchen ♥️

Ingredients

  • Dough, same used in Manouche recipe
    Manoushe (منقوشه) - Lebanese Flatbread with Toppings
  • Meat mixture
  • 1/2 kgmince lamb
  • OR mix mince beef and lamb
  • 2medium onions
  • 1big tomato
  • 1/2green or red hot chili pepper
  • Handfulpine nuts (optional)
  • 1/2 teaspoonLebanese seven spices or replace with allspice and a bit of cinnamon powder
  • Salt and black pepper
  • On the side
  • Lemon, sliced
  • Plain yogurt

    Prepare the dough and let it rest as per the recipe attached here

    Manoushe (منقوشه) - Lebanese Flatbread with Toppings

    In the meantime prepare the meat mixture by adding the meat and all the ingredients to a food processor (except the pine nuts). Blend until you get a fine mixture. Place the meat mixture in a colander to get rid of the excess juices. Add the pine nuts and mix.

    Preheat the oven to 220C.

    Now back to the dough. There are many ways to shape the lahm bi ajeen. You can make small pizza shape using this technique: On a floured surface, roll the dough with a rolling pin. Use the top of a bowl of ~12cm diameter as a cutter to shape the dough and make small cylinders.

    Spread an amount of 1 tablespoon on the dough.

    Another way is to make smaller cylinders (~8cm diameter) and place almost 1 teaspoon of meat in the middle. Pinch the four corners to get a square shape. The size of this should just fit perfectly into your palm.

    Place in the oven and bake for almost 15 minutes until golden. Serve immediately with a squeeze of lemon on top and a bowl of plain yogurt on the side.
