Simple everyday Sabzi with Ivy Gourd or Tindli or Tindora. Made with just a few spices that are common to any Indian pantry. It's absolutely easy and can be an excellent choice for mealtimes. It's a good choice for Lunchbox too.
It goes very well with Rotis and Parathas. It can also be relished with any gravy and simple boiled Rice as well.
A homemade and a delicious Sabzi for all. It doesn't require much time too. Though it might not be loved by the Children, it can be made delectable for them by serving it with Pooris and a simple Suji Halwa. I do the same and pack it in their Lunchboxes thereby making them go for it. It's a healthy Vegetable and has many medicinal benefits. It's a must have one in the Season though it's available throughout the Year but still it's always the best in Winters when it's in Season. Infact not only this one, there a whole lot of healthy Vegetables and Fruits that are in abundance in this Season.

Ingredients

25-30 minutes
5 servings
  1. 500 gmIvy Gourd
  2. 1 tspGinger garlic paste
  3. 2 tbspOil
  4. 1 tspSalt or to taste
  5. 1 tspKashmiri Red Chilli powder
  6. 1/2 tspTurmeric powder
  7. 1small bunch chopped Coriander Leaves
  8. 2finely chopped Onions
  9. 1/8 tspAsafoetida or Hing
  10. 1 tspCoriander powder roasted
  11. 1/4 tspCumin powder roasted

Steps

25-30 minutes
  1. 1

    Wash and cut it into thin strips or julienne. In a pan, heat some oil and add the ginger garlic paste. Saute it for a few seconds and then add in the asafoetida and the other powdered spices as well. Now add in some chopped onions. After they are translucent or light brown, stir in the ivy gourd.

    Cover and cook on a low flame for 15 minutes. Do not over cook it. It should retain the crunch. It will be done in 15-18 minutes in all. It will be done very quickly. Cook it for a little longer duration if you prefer it to be more crispier.

    Garnish with coriander and serve hot. Serve hot as a delicious side dish to many an important meals. Yum! Enjoy!
