Aloo Palak is a delicious and nutritious Indian potato & spinach stir fry. This Punjabi Aloo Palak recipe can be made in just 25 minutes and is perfect for a quick healthy weeknight dinner! Palak (Spinach) is a versatile vegetable filled with many nutrients and vitamins.

First of all, wash the spinach and chopped it into small pieces.

Now heat oil in a pan and add cumin seeds. Add dry kashmiri red chillies, asafoetida, finely chopped garlic cloves, finely chopped ginger to it and saute it on slow flame for 1 minute. After that, add the finely chopped onions to this, mix well and saute until the onions turn a little pink.

Now add the chopped potatoes to this, mix well, cover the lid and cook the potatoes for a while. Now add finely chopped tomato, finely chopped green chillies and salt to this, mix and cover the lid and cook 80% of the potato on slow flame.

Now add coriander cumin powder, red chilli powder, turmeric powder and chilli flakes to this and mix well. After that add spinach leaves to this and mix well. Cover and cook for 1 to 2 minutes on medium flame till the spinach becomes soft.

Then add kasurii methi to this and mix well. Then cook the spinach leaves till the oil separates.

Now our Aloo Palak Sabji is ready to serve. Serve this vegetable with hot roti, paratha or naan.
