Quick & healthy meat muffins

A great way to pack vegetable and protein, this is becoming my "go to" alternative when I want to use up vegetables and mince meat in a quick and easy way. It's also great for packed lunch or chopped up with salad a few days later. You can vary proportions of meat and veggies, or even make them meat only.

I usually make them healthy, with lean mince and not too much cheese - you can use less cheese if you are using cheese with sharp taste, like parmesan. Variations of this recipe are endless, depending on your taste and what you have in the fridge, but I have included some notes on the consistency of the batter that is needed for the muffins to bake within the specified time. Other vegetables that would work well are peas, finely chopped boiled green beans, steamed chopped spinach (water squeezed out). 1 eggs should be sufficient even if you double the quantity -it's a binding agent.

I have used chickpea flour as a base to avoid gluten and grains, and you may have to vary the quantity to get the right consistency, depending on vegetables you use or if you are using liquid-ingredients, such as tomato sauce. Ingredients

2-3 servings
  • 250 gminced chicken or turkey (or other meat of choice)
  • 1medium or 2 small carrots, finely grated
  • 1small zucchini / courgette, finely grated
  • 2-3 tablespoontomato sauce (optional)
  • 1-2 tablespoongrated parmesan or mozzarella (more to taste)
  • 1 tablespoonsmixed herbs such as oregano, thyme and basil (more to taste)
  • 1-2wedges of chopped up pumpkin or squash (optional)
  • 1egg
  • 1 cupchickpea or other flour
  • 1 teaspoonsalt, or less if you are using salty cheese
  • 1/2 teaspoonwhite or black pepper (more to taste)

    Pre-heat oven to 180C and lightly grease the muffin pan.

    Finely grate courgette and carrot and finely chop any other (cooked) vegetables you are using.

    Mix everything together aside from chickpea flour until herbs, spices and all ingredients are mixed evenly. Add 1/2 cup of flour and mix in well, and then add the rest of the flour The consistency should not be liquid, or too dry - ie it. should stick / together rather than be dry to touch like dough or crumble.

    Use tablespoon to add 2-3 spoons into each standard muffin hole. The mixture should be in line with the pan, not higher, as it grows somewhat during baking.

    Cover with aluminium sheet or baking sheet, allowing enough space on top between the she sheet and the pan for the muffins to grow. and air to circulate. This is to let the mixture cook well, while the top does not burn too much and become hard.

    Bake for 15' covered, and then remove the foil. Bake for another 20 -25 minutes until done and top browns.

    You can add some sesame seeds on top, either before putting it in the oven, or when you remove the foil.

    Take out and let cool. Using the knife cut / separate from the edges and take out of the mould..

    Serve warm or cold, with vegetables, salad for a light but a very filling meal. Enjoy!
