Soak vermicelli in hot water for 25 mins

Marinade the steak with honey, soy and garlic masterfoods marinade overnight preferably

While vermicelli soaks dice steak into small bits

Dice 125g of middle eye bacon
- 5
Put vermicelli into large pot
- 6
Pan fry steak (and bacon at the end) in 2 tbsp of peanut oil. Cook on high heat until golden. May have to do in batches

Dice onion and garlic and ginger spring onion and add to beef, cook for another 2 mins. Ginger is half and half, finely chopped and fine lengths

Chop up vermicelli with scissor. Do this quite a lot, turning the Vermicelli to expose uncut lengths

Lightly drain vermicelli. Take perhaps, half the water out.

Add all ingredients in large pot and stir together

Add soy sauce by the squeeze until vermicelli starts browning. We used about 275ml of dark soy sauce. You could use slightly more if you wanted

Put on midheat til simmering and conistently stir to stop from sticking to the bottom. Do this for around 15 mins

Test for flavour after about 15 mins of simmering. Add water if it stays to dry out and then cook for another 15-20mins on a slightly lower heat. Make sure to check it isn't sticking
