With a delicious almond flavor, a hint of cinnamon and lemon, these are incredible! They use erythritol instead of sugar and are low in fat.

Mix the flours and toast them in a skillet, stirring constantly for 4-5 minutes. Remove and toast the chopped almonds until golden brown.

Combine the flours with the baking powder and sift (optional). Add the chopped almonds, lemon zest, cinnamon, and erythritol.

Gradually add the room temperature butter until a firm dough forms. Cover and refrigerate for 30 minutes.

Roll out the dough with a rolling pin to about 1/2 to 2/3 inch thick (1 to 1.5 cm). Cut out the polvorones with a round cookie cutter or a glass. You can also divide the dough into 10 pieces and shape as desired.

Place the sesame seeds on a plate and dip the top of each polvorón in them. Bake in a preheated oven at 350°F (180°C) for 15-20 minutes. Once cooled, dust with powdered erythritol.
