Galette is enjoyed all through January! This version uses almond cream filling, so it doesn’t contain frangipane.

For the filling: In a mixing bowl, add all the filling ingredients and mix with a hand mixer until smooth.

Unroll one sheet of puff pastry and place it on a baking sheet lined with parchment paper. Spread the almond cream filling on top, and don’t forget to add the fève (small charm or bean) if you like!

Place the second sheet of puff pastry on top and seal the edges well.

In a bowl, beat the whole egg and egg yolk together. Brush the galette with the egg wash twice, letting it rest in the freezer for 10 minutes between each coat.

Using a sharp knife or a scalpel, score the top of the galette with any pattern you like.

Preheat the oven to 400°F (200°C) and bake for 25 minutes.

Optional: For a shiny finish, make a syrup by boiling the water and sugar together until bubbling. Brush the hot galette with the syrup as soon as it comes out of the oven.

If you plan to eat it later, reheat the galette in the oven before serving to enjoy it warm.
