Steps

18-20 minutes
  1. 1

Start by heating the vegetable oil in a big pot over medium heat. Add the diced onion and minced garlic and sauté for about 3-4 minutes until the onion becomes translucent.

  2. 2

Add the diced tomatoes, cumin powder, and chili powder to the pot. Stir everything together and cook for a few minutes until the tomatoes are softened.

  3. 3

Add the rice to the pot and stir until it is well coated with the tomato mixture.

  4. 4

Pour stock in the chicken or vegetable and bring the mixture to a boil. Once it reaches a boil, reduce the heat to low, cover the pot, and let it simmer for 18-20 minutes or until the rice is fully cooked.

  5. 5

Once the rice is cooked, remove it from the heat and let it sit for a few minutes to absorb any remaining liquid.

  6. 6

Add the rice with salt and pepper to taste.

  7. 7

Fluff the rice with a fork and serve it as a side dish with your favorite Mexican dish.

  8. 8

Mexican rice is a versatile dish that can be served with a variety of dishes, such as tacos, burritos, enchiladas, and more. It is also a great way to add some extra flavor and texture to your meals. You can also customize this recipe by adding in vegetables such as bell peppers or corn, or even some diced chicken or beef to make it a more substantial dish.
