Soak the rice for 1-2hrs. Rinse out the rice until it's clean. Blend the soaked rice, cooked rice, ginger and onion together until it's smooth and creamy.

Pour the batter into a large bowl, add the yeast and mix it together and leave it to proof for some time. The longer you leave it, the more fermented it becomes.

Add the sugar, salt, baking powder and little water (the batter shouldn't be too watery or thick). Stir.

Drizzle some oil in your masa pan and once the oil is hot enough, pour some batter into the pan about halfway full.

When the edges begin to solidify, flip the masa over and cook both sides until golden brown.

Remove from heat and enjoy with stew, sauce or yaji. Serve mine with yaji.
