I made these rolls with some hints from Irish soda bread. A lot of these recipes use eggs and taste more like muffins, but I don't like them so much, so I modified the recipe and made it like bread.

Since you'll be baking these rolls at a high temperature for a short time to give them a crispy outer layer, make sure to preheat your oven. For 8 rolls. Recipe by Nooko

Ingredients

8 servings
  1. 3 tbsp★Instant mashed potato flakes
  2. 100 ml★Boiled water
  3. 170 gramsBread (strong) flour (you can also mix in a bit of whole-wheat flour)
  4. 2 tspBaking powder
  5. 1/2 tspSalt
  6. 3 tbspParmesan cheese (optional)
  7. 50 mlWater
  8. 1 dashRolled oats (for topping)

Cooking Instructions

    Preheat the oven to 200°C.

    Mix the ★ instant mashed potatoes and boiled water well. (You can substitute with mashed potatoes 100 g + 1 tablespoon of milk.)

    Add the remaining ingredients except for the topping in the order from the list to Step 2. Knead until the mixture becomes a soft earlobe-like consistency.

    Divide the dough into 8 portions, and roll into balls. Dab on a bit of water and sprinkle the surfaces with oatmeal to your liking.

    Reduce the oven temperature to 180°C, and bake for about 15 minutes until they become crispy and golden brown.

    They're great when fresh out of the oven, so warm them up in a toaster oven when cooled. They'll become crispy and tasty again!

    Variation 1: [Butter flavour] Add 1 tablespoon of butter instead of cheese.

    Variation 2: Add 1 egg to make them even fluffier. Reduce the amount of water by 1 tablespoon.

    Variation 3: [Kabocha squash] This is a variation by Cookpad user "Yosshi". She added kabocha squash flakes, butter, and poppy seeds.
