Seriously Delicious Leek and Salted Pork Yakisoba Noodles

I wanted to make yakisoba noodles, but I didn't have any cabbage or bean sprouts - only Japanese leek and pork. So I thought I'd try making the noodles with salted pork sauce.
Even my critical family who usually says things like "this looked a lot better in the photo" said this was amazing! It's a recipe I'm actually confident about.

Fry the noodles slowly in a generous amount of oil, pressing down on it with a spatula so that it gets crispy.
Adjust the amount of salt used depending on the kind of salt and your taste. The noodles don't have any saltiness, so I think it tastes best with a generous amount of added salt.

Ingredients

3 servings
  1. 1 stalkJapanese leek
  2. 200 gramsThinly sliced pork belly
  3. 1 tbspSesame oil
  4. 1 cloveFinely chopped garlic
  5. 1/2 tbspChinese soup stock
  6. 1/2 tspHigh-quality salt
  7. 3packs Yakisoba noodles
  8. 3 tbspVegetable oil

Cooking Instructions

    Finely chop the Japanese leek. Chop up the pork. Heat up the sesame oil in a pan and add the garlic. When it starts to release a nice aroma, add the pork and Japanese leek, and stir-fry until the meat changes color.

    Add the soup stock granules and salt to the pan with 100 ml of water, and bring to a boil. Add some katakuriko dissolved in water (1 tablespoon of water and 1/2 tablespoon of katakuriko) to thicken the sauce.

    Heat some oil in a frying pan and add the yakisoba noodles one packet at a time while untangling the noodles. Fry the noodles on both sides until crispy. When the surface of the noodles is crispy, add the salty pork sauce from Step 1 to finish.
