Ingredients

  1. 500 gmsred carrots
  2. 1/2 cupmilk
  3. 1 tspmalai or fresh cream
  4. 2 tbspghee
  5. 1/2 cupsugar or as needed
  6. 1 pinchsalt to balance the sweetness
  7. 10-12cashewnuts chopped
  8. 12raisins
  9. 1/2 tspcardamom powder
  10. For Rabri :
  11. 250 mlfull cream milk
  12. 6 tbsppowder milk
  13. 1 tbspdate palm jaggery

Cooking Instructions

    Peel and chop off both the ends of carrots.Using a food processor or grater,grate the carrots.Meanwhile for making rabri, boil milk in a broad vessel.Add milk powder to the boiling milk and stir so that no lumps are formed. Add date palm jaggery (nolen gur)and stir.Boil in medium to low flame stirring and let malai collect on the sides till it is evaporated and condensed to a semi-thick consistency. Heat ghee in a pan and fry grated carrot.Add sugar to taste as rabri is also mildly sweet.

    Add half cup milk and cook carrot in it till moisture evaporates. Add the rabri and malai and stir continuously so that the milk doesn't stick to pan.Cook till halwa is thick.In a separate pan heat 1 tsp ghee and lightly roast chopped cashewnuts and raisins. Add cardamom powder and chopped dry fruits and toss.Remove from heat and set the halwa in a greased mould to cool and set.Remove it on a plate and cut into squares or heart shape with a cookie cutter.

    Garnish with cashewnuts and serve Shahi Gajar Halwa or Carrot Pudding warm.Serve a delectable Indian sweet dessert with a twist and win the hearts of your loved ones.
