Easy and Delicious, Tender Pork Piccata

My kids were watching a cooking program on TV and started shouting that they wanted pork piccata. So I tried making it, and it was surprisingly easy and looked great too. Above all else, the meat is very juicy cooked this way. It's also delicious when cold, so good in bentos...

Be sure to put plenty of egg mixture on the pork.
This goes smoothly if you poke each piece of pork with a long toothpick and use it to dip the pork into the egg mixture. For 4 servings. Recipe by rey*
