Ingredients

15minutes
4 servings
  • 1 cupBuckwheat grouts/ Kuttu Daliya or Kuttu ki giri
  • 2 smallPotato boiled and cut into small cubes
  • 1.5 tspGreen chili/hari mirch chopped
  • 1.5 tspGinger / Adrak chopped
  • 1 tspCumin Seeds / Sabut Jeera
  • 1 tspmustard seeds
  • leavesFew curry
  • Peanuts and cahewnuts as per taste
  • 1whloe red chilli
  • PinchAsafoetida / Hing powder
  • 2 tbspClarified Butter / Desi Ghee
  • To Taste senda (rock)Salt
  • 1.5 tsplemon juice
  • 2 tbspFresh Coriander
  • black pepper powder and red chili powder to taste
  • cucumber slices as required

Steps

    Wash and soak kuttu daliya/ buckwheat grouts in water for 30 minutes. Now drain the water from the kuttu daliya and keep aside

    Heat ghee in the pan and then add cumin seeds and mustard seeds. When seeds start to crackle then add, red chilli,curryleaves,peanuts,cashewhalves,chopped potato,green chilies and ginger and give a stir.

    Now add the soaked kuttu daliya and stir for few seconds. Add 1.5 cup water and salt and mix. cook on lower the heat and simmer covered for about 8 minutes.

    Switch off the heat and then open the lid and If its slightly raw or there is water left then cook further for some time. When done gently fluff the kuttu upma.Add lemon juice and chopped coriander and a tsp of ghee (ghee is optional)Sprinkle black pepper powder and red chilli powder to taste.

    To serve -Arrange prepared upma in a bowl to Set.
    Press lightly and turn upma over platter. Garnish with Peanuts and cahewnut. Serve with cucumber slices.
