Ingredients

45-55 minutes
  1. 2large eggs
  2. 1-1/3 cupsbuttermilk
  3. 1 tspvanilla
  4. 2-1/4 cups sugar
  5. 2-1/2 tspbaking soda
  6. 2/3 cup unsweetened cocoa
  7. 1egg yolk
  8. 1 cup + 2 Tbsp vegetable oil
  9. 2-1/2 cups+ 2 Tbsp all purpose flour
  10. 1 tspsalt
  11. 1-1/3 cup HOT water

Cooking Instructions

45-55 minutes

    Preheat oven to 350*. Grease and flour baking pan. Set aside.

    In bowl, mix eggs, yolk, buttermilk, oil, & vanilla. Mix well. It’ll be a tad foamy.

    Sift ALL dry ingredients together. Stir into egg mixture.

  4. 4

    SLOWLY pour in HOT water, once water is combined, continue mixing on low speed for 1 minute. Batter will be soupy!

    Pour into prepared pan, jiggle pan to evenly distribute.

  6. 6

    Bake 45 - 55 minutes or until cake tester inserted comes out clean.

    Remove from oven, let sit in pan10 minutes. Invert onto wire rack to room temp. Store in airtight container.

    This so yummy by itself, it’s even better with a big scoop on vanilla ice cream!

I love to bake sweet stuff, with a bit of savory tasty cooking thrown into the mix. Just good ol’ southern cuisine. Most of my recipes were handed down from my Great & Grand Grannies. If they didn’t grow it or raise it, it wasn’t eaten. My hubby and I have alot of food allergies so it gets challenging sometimes to make things that we both can eat. Neither of us can eat shellfish, which is sad, considering where we live, cuz it’s everywhere! Y’all won’t find any shellfish /saltwater fish recipes here. Some fresh water fishes, maybe. Hope y’all enjoy my recipes!
