Tomato and Paneer Sabji (Indian Stir Fried Vegetables and Cheese)

When I used to live in my homeland India, a lady in our neighborhood used to make this a lot for us. Adding tomato ketchup is my mother's secret touch. I love ketchup, so I love this dish too. It reminds me of home.

I don't really have any hints.
It goes well with rice or pasta, and it has lots of vegetables so it's healthy too.
When people think of Indian cooking they only tend to think of curries, but this is the kind of dish that is eaten in Indian homes. It's not something you get in a restaurant. For 2 servings. Recipe by Plabar

Ingredients

2 servings
  1. 200 gramsTomatoes (canned is fine)
  2. 1/2Red bell pepper
  3. 1/2Green bell pepper
  4. 1 mediumOnion
  5. 100 gramsPaneer
  6. 1 tspCumin seeds
  7. 1 tspChili pepper powder
  8. 1/2 tspTurmeric
  9. 1 1/2 tspCoriander seed powder
  10. 1Salt
  11. 2 tbspKetchup

Cooking Instructions

    Slice the onion and bell peppers thinly lengthwise.

    Melt butter in a frying pan. Add the cumin seeds, and stir fry them until they start to make popping sounds.

    When the cumin seeds are cooked, add the onion and stir fry until tender.

  4. 4

    Add the bell peppers and stir-fry until tender.

  5. 5

    When the bell peppers are cooked, add the coriander powder, turmeric and chilli powder, and mix well with the vegetables.

    Add paneer or cubed firm tofu, and stir fry until either the paneer or tofu is well colored.

    Add the canned or finely chopped fresh tomatoes, and mix well.

    Add the ketchup, and mix well again. Bring to a boil. Taste and add salt.

    It's ready. It goes well with rice, but it's delicious as a pasta sauce too. How about serving with some dal?
