This is a very easy and healthy recipe for including green vegetable like cluster beans in diet. Cluster beans in rich in nutrients, easy available in Indian markets and cost effective too. They otherwise is a little bitter for everyone s liking but adding coconut brings out a really good flavour.
Cooking Instructions

Wash and chop the cluster beans to small pieces and boil it with little water, onion and salt. Do not add extra water. Just a little water is required. You can steam it instead or microwave it

In a mixer grinder grind together the coconut shredded, turmeric powder and cumin.

In a kadhai, heat oil and add the mustard seeds and urad Dal when the splutter.Add the cut shallots green chillies, red chillies and curry leaves. Wait for shallots to brown

Now add the cooked cluster beans and fry for 2 - 3 minutes till water is completely gone.

Add the ground coconut masala to it and fry again for few minutes. Check the salt and adjust accordingly.

It can be either thoran or mezhukkupuratti. Only one kind of veggie is added or a combination of veggies are added. Thoran and mezhukkupuratti belong to the same category with slight variations. Usually, while making thoran grated coconut which is ground along with some seasonings is added to the veggies. While in mezhukkupuratti grated coconut is directly added to the veggies and is stir fried.Veggies like carrot, beans, beet root, cauliflower, cabbage can be used for making mezhukkupuratti.
