Heat your oil in a pan over a medium for a minute. Add onion and fry for some minutes. Add the ground scotch bonnet, red chilli and turmeric, then cumin and coriander powders. Continue cooking, stirring for 30secs. Then add seasoning and a tbsp flour.

Add the mashed potatoes, cook, stirring to evenly mix the ingredients until heated through, 2-3mins. Turn off the heat and let stand until cool enough to handle.

Mix flour and water (in small qty) to make a paste. Take a samosa sheet and fold the curved part in two, rub the paste and seal it.

Fill the cone with 2 tsp of the filling. Fold it to make a triangular shape and seal. If the corners of the samosa have any gaps, fill them with the flour paste and pinch them to seal.

Repeat this process for the remaining wrappers. Then heat up oil and fry both sides on medium heat until golden brown.

Drain and serve hot or warm. Enjoy!
