Cabbage and Collards
A blended mix of greens.
Steps

Start browning the sausage. Chop the cabbage.

Add in the onion to the sausage. Add the mirin, water, salt, and vinegars.

When the liquids are boiling add in the greens. Stir till the greens are evenly wilted. Salt and add the cabbage when the greens are finished wilting. Cover and allow to cook.

Cook stirring occasionally for 1 hour. Keep an eye on the liquid level, add water if needed.
